Sweet potatoes contain plenty of energizing carbohydrates and, like carrots, a lot of beta-carotene, an antioxidant which helps protect the body's cells against free radical damage.
You can leave the peel on the sweet potatoes, which will give you additional fiber; however, if you don't peel them, make sure to watch them extra carefully.

- 6 Sweet potato (peeled and sliced)
- 1 Tbsp light brown sugar
- 2 tsps ground cinnamon
- ½ cup butter (melted)
- 4 cups Marshmallow
Preparation steps
1.
Preheat the oven to 375°F. Grease a baking dish.
2.
Arrange the sweet potato slices in the baking dish. Sprinkle with the sugar and cinnamon.
3.
Pour over about half the melted butter. Cover and bake for 30 minutes.
4.
Pour over the remaining butter, cover and continue cooking for 20-30 minutes until the sweet potatoes are tender.
5.
Arrange the marshmallows on top and return to the oven for 5-8 minutes until the marshmallows are lightly browned and starting to melt.
