Cut out circles from the bread (5-6 cm) using a round cookie cutter. Toast the bread in a grill pan with the olive oil. Rinse the tomatoes, remove the stems and cut into 1 cm thick slices. Drain the mozzarella and cut into slices. Rinse the basil and shake dry. Place a slice of tomato and mozzarella on each piece of toast. Season with salt pepper and basil. Secure with toothpicks and serve hot.
