1 kilogram Tripe
2 Tbsps vegetable oil
800 milliliters milk
4 onions
30 grams butter
3 Tbsps Pastry flour
salt
freshly ground peppers

30 grams clarified butter
2 Tbsps chopped parsley

Preparation steps

Rinse the tripe, pat dry and cut into 3 cm (approximately 1 inch) pieces. Heat the oil in a saucepan and fry the tripe for 3-5 minutes. Pour in the milk, cover and cook about 45 minutes until soft. Drain the tripe, saving the milk. 

Meanwhile, peel the onions and cut into rings.

In another saucepan, melt the butter, sprinkle with flour and add the milk. Stir until smooth, then let simmer over medium heat for 5 minutes. Season with salt, pepper and nutmeg.

In a frying pan, heat the butter and fry the onion rings until golden brown. Add the tripe back into the sauce and arrange on a plate. Top with the fried onion rings and serve sprinkled with parsley.
