- 4 skinless Chicken breasts
- 2 Tbsps Oil
- 2 Mangoes
- 4 Tbsps Mayonnaise
- 2 Tbsps Mango chutney
- juiced Limes
- 12 flour Tortillas
- 4 scallions (chopped)
- 1 Arugula

1 Bowl, 1 Measuring cups, 1 Cutting board, 1 Large knife, 1 Tablespoon, 1 Teaspoon, 1 Rolling pin, 1 Hand mixer, 1 Fluted tart pan (16 cm Ø), 1 Oven rack, 1 Fine grater, 1 Sieve
Preparation steps

Heat the oil in a wide pan and gently fry the chicken for 5 minutes on each side or until golden brown and cooked through. Allow to cool then shred the meat.

Peel the mangoes and roughly chop the flesh. Mix the mayonnaise with the mango, mango chutney and lime juice and stir in the cooled chicken. Season with salt and pepper.
3.
Divide the mixture between the tortilla wraps, sprinkle with spring onions and rocket then fold in the bottom third of the wrap and roll up. Secure with kitchen string.
