- ½ cup Tapioca
- 2 ½ cups Apple juice
- 1 ⅔ cups Evaporated milk (or non dairy substitute)
- ¼ cup brown sugar
- 1 Banana (1/2 mashed and 1/2 diced)
- 2 Plum (pitted and diced)
- 1 Lime (juiced, zest grated)
- 1 Passion fruit (flesh scraped out)
Product recommendation
apples are one of the most chemically sprayed fruits, so look for unsweetened organic apple juice whenever possible.
Preparation steps
1.
Place the tapioca in a bowl, cover with hot water and soften for around 10 minutes.
2.
Place the apple juice, cream and sugar in a pot and bring to the boil. Reduce to the lowest heat and stir in the tapioca. Stir for around 20 minutes until the grains become transparent.
3.
Add the banana and the plums to the soup and season with lime juice and sugar. Remove from the heat and leave to cool. If the soup is too thick, add a little water.
4.
Transfer the soup to bowls and serve garnished with the passion fruit and the lime zest.
