- ½ cup round grain Rice (for rice pudding)
- 3 ½ cups canned, reduced-fat Coconut milk
- 2 ½ cups 2% milk
- ¼ cup coconut sugar
- vanilla extract
- 1 large Banana (sliced)
- 1 ripe Mango (peeled and diced)
- 1 ½ cups cubed Pineapple
Preparation steps
1.
Place all the ingredients, except the fruit into a pan over a low heat.
2.
Bring to a simmer, stirring then cover the pan and simmer very gently for 40-50 minutes until the rice is tender stirring occasionally. Remove from the heat and leave to cool completely with the lid on.
3.
Stir the fruit into the cold rice and spoon into serving dishes.
