- 106 ozs Turkey (cleaned and trimmed)
- ½ cup clarified butter
- 3 heads garlic cloves (split in half)
- 1 Bouquet garni
- 2 white onions (split in half)
- 2 Parsnips (peeled and chopped)
- salt
- freshly ground peppers
Preparation steps

Preheat the oven to 170°C(150° fan)|325F|gas 3.

Rub the turkey with half of the clarified butter. Season the insides and outsides with plenty of salt and pepper and then stuff with some of the garlic and a bouquet garni.

Arrange the remaining garlic in a large roasting tray and mix with the onions and parsnips. Drizzle with the remaining clarified butter and season with salt and pepper.
4.
Roast the turkey for 4 hours until the thickest part of the thigh registers at least 71°C|160F on a meat thermometer.
5.
Remove from the oven, cover loosely with aluminium foil, and leave to rest for at least 30 minutes before serving.
