- 1 red pepper (deseeded and cut into chunks)
- 1 yellow pepper (deseeded and cut into chunks)
- 1 Zucchini (cut into chunks)
- 1 small Eggplant (cut into chunks)
- 12 cherry Tomatoes
- 12 shallots (halved)
- olive oil (for cooking)
- Pesto (to serve)
- thyme (to garnish)
Preparation steps

Soak 12 wooden skewers in water for 15 minutes.

Heat the grill to its highest setting.

Thread the turkey and vegetables onto the wooden skewers and brush liberally with oil.

Grill the kebabs for about 6 minutes, turning from time to time. Serve garnished with the thyme and the pesto alongside.
