Turkey Rolls with Hardboiled Eggs

4 large Turkey cutlets (thinly sliced)
cooked ham (4 slices)
4 hardboiled eggs (peeled)
1 can Tuna (in water)
1 shallot
1 Tbsp Caper
2 Tbsps freshly squeezed lemon juice
2 Tbsps olive oil (Extra-virgin)
2 Tbsps Crème fraiche
salt
peppers (freshly ground)

Preparation steps

Drain the tuna. Peel shallot and finely chop. Rinse capers under cold water and drain. Place the tuna, capers, shallot, lemon juice and olive oil in a blender. Season with salt and pepper and puree until smooth with 2-3 tablespoons of water. Season again. Pound the turkey cutlets flat, arrange on a work surface and season with salt and pepper. Top each with a slice of ham. Spread with the tuna mixture. Lay a peeled egg across each cutlet and roll the turkey cutlets tightly. Secure with toothpicks.

Heat 2 tablespoons of butter in a pan, add the rolls and fry until golden brown on all sides. Then reduce the heat, cover and simmer 10 minutes. Season with salt and pepper.

Lift the finished rolls from the pan and cut into slices. If desired, serve with blanched spring vegetables or a crunchy salad.
