6 Tbsps softened unsalted butter
1 cup powdered sugar
¾ cup all-purpose flour
4 large egg whites
1 tsp pure vanilla extract
To Decorate
1 ¼ cups white chocolate (chopped)
2 tsps vegetable oil
¾ cup chopped, toasted almonds

Preparation steps

Preheat oven to 425º F. Line 2 baking sheets with parchment paper and lightly spray with nonstick cooking spray. Set aside.

In a large bowl, beat butter and sugar together on low speed until light and fluffy, about 1 to 2 minutes. Add flour, egg whites and vanilla extract and beat just until incorporated.

Working in small batches, spoon about 2 teaspoonfuls of batter into each corner of the prepared pan. Using a spatula, spread the batter portion into a 4 by 3-inch oval. Bake for 3 to 5 minutes, or until just golden brown.

Using a metal spatula, loosen the cookies from the parchment paper, but leave them in the pan. Working quickly place one cookie upside down on a clean work surface and roll it lengthwise around the handle of a wooden spoon. Remove the rolled cookie and cool on a wire rack. Repeat until all 4 cookies are rolled. Continue to repeat the process until the batter is gone, spraying the parchment paper with cooking spray as needed.

Melt the chocolate and oil in a double boiler set over simmering water. Allow the chocolate to cool slightly. Dip one end of the cookie in chocolate and then immediately dip the chocolate dipped end in chopped almonds. Place on clean parchment paper to dry. Serve.
