12 small shallots

1 yellow paprika
2 Zucchini
250 grams Cherry tomatoes
2 Tbsps olive oil
1 garlic clove
1 ½ Tbsps Tomato paste
800 milliliters Vegetable broth
100 grams Millerighe Giganti pasta
100 grams Spinach Millerighe Giganti
salt
freshly ground peppers
2 Tbsps freshly grated Parmesan
2 Tbsps freshly chopped parsley

Preparation steps

Rinse the vegetables and peel the shallots. Halve red and yellow peppers, remove seeds and cut into strips. Cut zucchini lengthwise and slice into very thin slices. Cut tomatoes in half. In a saucepan, heat the oil and sauté shallot and vegetables 2-3 minutes.

Peel the garlic and squeeze into the saucepan. Stir in the tomato paste and pour in the broth. Add the pasta and simmer for about 15 minutes over medium heat. Season with salt and pepper, place in preheated bowls and serve sprinkled with Parmesan and parsley.
