2 ⅔ cups Pork (cubed)
1 clove garlic cloves (finely chopped)
¾ inch fresh ginger (finely chopped)
2 Tbsps soy sauce
2 Tbsps Hoisin sauce
1 Tbsp Fish sauce
1 carrot (finely sliced into strips, using a decorative serrated knife if desired)
¾ cup Celeriac (finely sliced into strips, using a decorative serrated knife if desired)
1 tsp Rice wine vinegar
2 Tbsps sesame oil
1 onion (sliced into strips)
Chili powder
4 Baguette
4 sprigs cilantro (to garnish)

Preparation steps

1.
Put the meat in a bowl. Add the garlic, ginger, soy, hoisin and fish sauce and mix well. Cover and put in the refrigerator to marinate for around 2 hours.

Blanch the carrot and celeriac in salted water for 1-2 minutes, quench in cold water and drain well. Mix with the vinegar and leave to infuse.

Remove the meat from the marinade and fry in a wok or frying pan in hot oil for 1-2 minutes, stirring. Add the onion and fry briefly. Drizzle over the marinade and a little water and braise for a further 1-2 minutes until cooked. Season to taste with chilli powder.
4.
Cut the rolls open lengthways and fill with the meat. Scatter the vegetables over the top and serve garnished with sprigs of coriander.
