- ¼ cup freshly squeezed Lime juice
- 1 tsp Dijon mustard
- 1 clove garlic cloves (minced)
- ½ cup Canola oil
- ¼ cup Walnut oil
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- 4 cups Watercress (washed and dried)
- 2 red Apple (cut in 1/ 2-inch dice, skins on)
- ¾ cup Peanuts (coarsely chopped)
- ¾ cup dried Cranberry
Preparation steps
1.
Whisk lime juice, mustard, garlic and oils together with salt and pepper.

Combine watercress, apples, peanuts and cranberries together in a large bowl until mixed. Pour dressing over salad and toss gently to coat; serve.
