- For the pastry
- 1 ¾ cups Gluten-free flour (plus extra for dusting)
- ½ cup unsalted butter
- 2 Tbsps sugar
- 4 Tbsps cold water
- 1 egg
- For the filling
- ⅔ cup sugar
- 3 Tbsps Corn starch
- 28 ozs junami Apple (peeled, cored and sliced)

Preparation steps
1.
For the pastry: sift the flour into a mixing bowl and rub in the butter until the mixture resembles breadcrumbs. Stir in the sugar.

Whisk together the water and egg and add to the dry ingredients, mixing continuously until the mixture just comes together as a dough. Wrap the dough in cling film and leave to rest for at least 30 minutes.

Heat the oven to 200°C (180° fan) 400°F gas 6. Grease a 23cm|9" pie dish.

For the filling: mix together the sugar and cornflour. Add the apples to the sugar mixture and toss well.

Roll out half the dough on a lightly floured surface and line the dish. Fill with the apple mixture.

Roll out the remaining pastry on a floured surface to fit the dish. Brush the edges of the pastry with a little water.
7.
Place on top of the filling and seal the edges well. Cut out shapes from the pastry trimmings and attach with a little water. Make a small hole in the top to allow steam to escape.
8.
Brush with a little milk. Bake for 25-30 minutes until the pastry is golden brown. Cool in the dish.
