1 cup white chocolate (chopped)
1 ½ cups unsalted butter (softened)
½ cup Almond flour
1 ½ tsps vanilla extract
¾ cup granulated sugar
¼ tsp salt
1 large egg yolk
2 cups all-purpose flour (sifted)
2 Tbsps powdered sugar

Preparation steps

1.

Melt together the chocolate and 4 ounces of the butter in a heatproof bowl set atop a half-filled saucepan of simmering water. Stir occasionally until smooth and then remove from the heat.

Add the ground almonds and half a teaspoon of vanilla extract, stirring well. Cover and leave to cool to one side.

In a large mixing bowl, cream together the butter, granulated sugar, salt, and remaining vanilla extract until pale and fluffy.

Add the egg yolk, beat well, and then fold through the flour until dough comes together. Turn out the dough from the bowl and knead gently to bring it together. Wrap in cling wrap and chill for 30 minutes.

Preheat the oven to 325F and line two large baking trays with parchment paper.

Remove the dough from the fridge and roll into a long cylinder, approximately 2 " in diameter. Use a sharp knife to cut into 1/8" rounds, spacing them apart on the baking trays.

Cut out small star shapes from half the rounds using a cutter or freehand using the tip of a sharp knife.

Bake for 16 - 18 minutes until set and starting to colour at the edges. Remove to a wire rack to cool.

Spread the complete round cookies with the white chocolate filling, sandwiching them against the star cookies. Dust with icing sugar before serving.
