Preparation steps

Melt the chocolate with the water and basil in a heatproof bowl over a pan of simmering (not boiling) water. Remove from the heat and set aside for 10 minutes, then remove the basil.

Whisk the egg whites until stiff, but not dry. Stir 3 tablespoons cream into the melted chocolate, then gently fold the chocolate into the egg whites.

Whisk the remaining cream until thick. Fold the chocolate mixture into the cream.

Divide the strawberries between 4 serving glasses. Spoon in the chocolate mixture and cover with cling film. Chill for at least 3 hours before serving. Decorate with basil and strawberries.
