- For the dough
- 300 grams Semolina flour
- 3 eggs
- 2 Tbsps vegetable oil
- salt
- Pastry flour (for dusting)
- To serve
- 3 garlic cloves
- 2 Tbsps Truffle oil
- fresh white Truffle
Preparation steps

Combine the eggs, oil, semolina and 1 pinch of salt in a bowl. With your hands, quickly knead until smooth, shape into a ball and chill for 20 minutes in the refrigerator.

Meanwhile, peel the garlic and chop finely. Roll out the dough thinly on a floured work surface. Fold the dough over and roll out again. Repeat 3 times. Roll out the dough thinly and sprinkle with flour. Roll up and cut into 1 cm (approximately 1/3 inch) wide strips.

Cook the noodles in a pot of boiling salted water until al dente, around 2-4 minutes. Sweat the garlic in a pan with the truffle oil. Add the drained pasta and toss briefly. Distribute between warm serving bowls. Serve garnished with freshly shaved truffle.
