- 300 Spelt flour
- 200 grams Pastry flour
- 1 tsp salt
- ½ cube fresh Yeast (21 grams)
- Pastry flour (for the work surface)
- seeds or Oats (as desired, such as oatmeal, sunflower seeds, etc.)
Preparation steps

Mix flour with salt in a bowl and create a well in the middle. Dissolve yeast in 300 ml (approximately 10 ounces) lukewarm water, pour into the well and knead with th dough hook of an electric mixer until smooth.

On a floured work surface, knead dough for about 5 minutes and allow to rest for 1 hour in a warm place until doubled in size. Preheat the oven to 200°C (approximately 400°F). Knead dough again, in portions shape dough into rolls and place on a deep baking tray.

Let rest another 15 minutes. Brush rolls with water, sprinkle with seeds or flakes if desired and bake in the preheated oven for about 30 minutes. Remove from the oven, allow to cool briefly and serve warm or cold.
