350 grams Pastry flour
½ cube fresh Yeast
125 milliliters lukewarm milk
75 g each chopped walnuts and Hazelnuts
50 grams chopped Pine nuts
2 dried Figs (chopped)
40 grams raisins
1 Tbsp Grappa
40 grams Candied lemon (diced)
2 tsps grated Orange peel
40 grams softened butter
1 egg yolk
40 grams sugar
1 pinch salt
½ tsp ground cilantro
1 egg (beaten)

Preparation steps

Dissolve the yeast in the lukewarm milk and combine with the flour. Knead the mixture with the dough hook attachment of an electric mixer until smooth. Cover and let rise in a warm place for about 1 hour.

Soak the raisins in the grappa.

Transfer the dough to a lightly floured surface and knead in the butter, egg yolk, sugar, salt, candied lemon peel, orange zest, chopped nuts and figs, soaked raisins and ground coriander.

Preheat the oven to 180°C (approximately 350°F). Grease 4 small ramekins with butter and dust with flour. Divide the dough into 4 equal portions and place into the prepared ramekins. Brush the top of the dough with the beaten egg and let stand for 15 minutes. Bake for 1 hour, until golden brown. Remove from the oven and cool on a wire rack.
