- 2 red chili peppers (seeds removed, halved)
- 1 Lime zest
- 1 Lime juice
- 2 Lemongrass (roughly chopped)
- 1 inch fresh ginger (chopped)
- 4 cloves garlic cloves
- 1 onion (chopped)
- 1 tsp Turmeric
- 1 tsp Shrimp paste
- 3 Tbsps Fish sauce
- 2 cups Coconut milk
- 32 ozs Halibut fillet (skinned, cut into chunks)
- 1 large Mango (peeled and diced)
- To serve
- boiled Rice
Preparation steps

Put the chillies, lime juice and zest, lemon grass, ginger, garlic, onion, turmeric, shrimp paste and fish sauce into a blender or food processor and blend to a coarse paste.

Put the paste and coconut milk in a pan and bring to a simmer. Cook gently for 10 minutes, stirring. Add the fish and cook for 4-5 minutes, until the fish is cooked through.

Add the mango and cook for a further 2 minutes.

Place the rice in serving bowls and spoon the curry on top. Garnish with mango slices and coriander.
