- 2 Zucchini
- 2 Tbsps Pastry flour
- salt
- freshly ground peppers
- 1 tsp thyme
- 100 milliliters olive oil
- 200 grams Feta
- paprika (1/2 red and yellow)
- 1 shallot
- 1 garlic clove
- 1 tsp rosemary
- thyme (1 teaspoon)
- oregano (1 teaspoon)
- Whipped cream
Preparation steps

Mix flour and thyme and season with salt and pepper. Cut zucchini lengthwise into thin slices and coat in mixture. Fry zucchini slices in a pan in oil until golden and drain on paper towels.

Crumble the feta. Core bell peppers, trim and cut into very small cubes. Peel the shallot and very finely chop. Mix bell peppers with shallot, crushed garlic, remaining herbs and feta cheese. Stir in enough cream to make a spreadable paste.
3.
Spread cheese mixture on the zucchini slices, roll tightly and secure with toothpicks.
