150 grams breadcrumbs
1 small egg
80 grams butter (cubed)
6 small Cherry tomatoes
4 Tbsps finely chopped Fresh herbs (such as basil, oregano, parsley)
2 Tbsps clarified butter
Wooden skewer

Preparation steps

Preheat the oven to 120°C (approximately 250°F).

Rinse, peel and slice the zucchini lenthwise. Season lightly with salt and pepper. Thinly slice the cheese and cut into strips of similar size to the zucchini slices. In a bowl, knead the breadcrumbs with the egg and cubed butter until combined. Rinse halve and core the cherry tomatoes, and cut into small cubes. In a bowl, stir the cherry tomatoes with the fresh herbs. Season with salt and pepper to taste.

To assemble, lay the zucchini slices flat and arrange a slice of cheese on top of each. Sprinkle the breadcrumbs over the zucchini and roll into a pinwheel shape. Place each zucchini roll on a skewer. Heat the butter in a skillet. Add the zucchini skewers and sear briefly. Cover with aluminum foil and bake in the oven for 15 minutes. Remove from the oven and serve immediately with the cherry tomatoes.
