- 1 kilogram red Bell pepper
- 1 kilogram Tomatoes
- 100 milliliters olive oil
- 3 garlic cloves
- 1 bunch Basil
- salt (and)
- freshly ground peppers
Preparation steps

Rinse the peppers, cut into quarters and place cut-side down on a baking sheet lined with parchment paper. Cook under the oven's broiler until the skin has blackened, watching carefully. Remove and let cool covered with a damp kitchen towel, then remove the skin.

Blanch the tomatoes in boiling water, peel, quarter and remove seeds.

Peel the garlic and cut into slices. Fry briefly in hot oil, then add the peppers and tomatoes. Season with salt and pepper. Add the remaining oil, then simmer over very low heat for about 1 hour, stirring occasionally, until all the liquid has evaporated. Season to taste and set aside to cool until lukewarm. Serve garnished with basil.
