Preparation steps
1.
Strip the leaves from the thyme and rosemary
2.
Remove the stalks from the tomatoes and slice into wedges.
3.
In a heavy based pan heat the oil, add the tomatoes, garlic, parsley (keeping a small amount back for garnish), thyme and rosemary. Season with salt and pepper.
4.
Add 100ml water and cook over a gentle heat for 20 minutes.
5.
Serve garnished with chopped parsley.
