- 300 grams boneless Lamb shoulder (trimmed)
- 150 milliliters olive oil
- 1 large onion
- 6 Tbsps finely chopped cilantro
- 1 tsp salt
- freshly ground pepper
- 1 tsp hot ground paprika
- 1 tsp dried mint
- 150 grams Shredded wheat
- 1 tsp Tomato paste
- 2 lemons
Preparation steps

Cut the meat into very thin strips. Peel the onion and finely chop. Heat the oil in a large frying pan and saute the onion and the meat. When the onions begin to become golden, add half the cilantro, 1.5 liters (approximately 1.5 quarts) of water, shredded wheat and season with salt, pepper, paprika and dried mint. Mix and stir in the tomato paste with 2 tablespoons water. Bring to a boil, cover, reduce heat and simmer for about 40 minutes over low heat.

Season the soup again, stir in remaining cilantro and serve with lemon halves or carved lemons.
