Almond Cinnamon Stars with Glaze

- 4 egg whites
- 1 pinch salt
- 10 ½ ozs sugar
- 2 Tbsps lemon juice
- 2 tsps Ground cinnamon
- 1 tsp Gingerbread spice
- 12 ozs ground almonds (unpeeled)
- flour (or ground almonds, for the work surface)
Preparation steps
Beat egg whites with a pinch of salt until stiff. Gradually sprinkle in sugar and leave to beat until a smooth meringue has formed. Add lemon juice and continue to beat until glossy and stiff. For the glaze, remove 3-4 tablespoons of meringue and refrigerate.
Among remaining egg whites, mixed in cinnamon, ground almonds and season to taste with gingerbread spice. Mix into a smooth dough.
Sprinkle some flour or ground nuts on a work surface. Roll dough out approximately 5/16 inch) thin and cut out stars. Place cookies on a baking sheet lined with parchment paper. Brush with the retained glaze.
Then leave to dry overnight at room temperature.
Preheat oven to 120°C / 250°F.
Place dried star in the oven to bake, so that the glaze is lightly browned in about 25 minutes. Allow to cool on the baking sheet and serve.
