- 4 egg whites
- 2 Tbsps lemon juice
- 10 ozs sugar
- 2 tsps Ground cinnamon
- 12 ozs ground almonds
- 3 Tbsps chopped almonds
- ground almonds (for dusting)
Preparation steps
1.
Whip the egg whites with a pinch of salt until stiff. Gradually sprinkle in the sugar and gently mix until smooth. Beat in the lemon juice until stiff. Set aside 3-4 tablespoons for the glaze and chill.

Mix the cinnamon and almonds (ground and chopped) into the remaining egg whites. Knead into a smooth dough.

Dust the ground nuts on a work surface. Roll out the dough until 6-8 mm / 1/4 inch thick. Use cookie cutters to cut out stars. Place the stars on a lined baking sheet. Spread the egg white glaze on the stars.

Let dry overnight at room temperature.

Preheat the oven to 120°C / 250°F.

Bake the stars for about 25 minutes. The glaze should remain snow-white. Allow to cool and serve.
