Ingredients

For the ccokies
½ cup unsalted butter
cup dark brown sugar
2 cups all-purpose flour
1 pinch salt
1 tsp Baking powder
1 tsp ground cinnamon
¼ tsp ground cloves
½ tsp Mixed spice
2 large eggs (beaten)
4 Tbsps clear honey
To decorate
1.333 cups instant royal icing mix
3 Tbsps water
colored sugar sprinkles

Preparation steps

For the ccokies: heat the oven to 160°C / 325°F. Line 2 baking trays with non-stick baking paper.

Beat the butter and sugar in a mixing bowl until smooth and creamy.

Sift in the flour, salt, baking powder, cinnamon, cloves and mixed spice and stir until incorporated.

Beat in the eggs and honey to form a dough. If the dough is too dry add a little water; if too wet add a little flour.

Roll out the dough on a lightly floured surface, about 5 mm / 1/4" thick.

Cut star shapes out of the dough. Re-roll the remaining dough and cut out more stars.

Place the biscuits on the baking trays and bake for 20 minutes until golden brown and cooked through. Place on a wire rack to cool completely.

To decorate: prepare the icing according to the pack instructions. Ice the edges of the biscuits using a teaspoon (use the tip of the spoon for dripping the icing onto the edges and the back of the teaspoon for smoothing).

Put a dab of icing in the center of each biscuit and sprinkle with the sugar sprinkles.
