This version with matcha and pistachios is healthier than traditional butter cookies, containing spelt flour type 1050, which is richer in minerals than standard flour, and raw cane sugar instead of refined sugar. 

If you want to make a little impression during the Christmas season, you should definitely bake these pistachio cookies with Matcha! Matcha not only provides the pretty colour but also scores with l-theanine and caffeine. The amino acid L-theanine has a calming effect and gives the invigorating character of tea caffeine a gentle touch. This promises calm energy and concentration!

Although pistachios are delicious, they are also susceptible to mold. Especially due to poor and humid storage, the exposure to the harmful aflatoxin can be high. So if your pistachios smell musty, throw them out.

1 shortbread cookies (cookie dough according to basic recipe)
½ tsp Vanilla bean
2 tsps lemon zest
2 tsps Matcha tea powder (ground green tea)
½ cup white chocolate
3 Tbsps Shelled pistachio (chopped)

1 Rolling pin, 1 Cookie cutter, 1 Pot

Preparation steps

First prepare the dough according to the basic recipe. You can find the link to the recipe "Cookie dough" under product recommendation or via our search function.

Knead vanilla bean, lemon zest and Matcha into the short pastry.

3.

Roll out the cookie dough and cut out stars with a cookie cutter. Place cookies on a baking sheet lined with parchment paper and bake in a preheated oven at 180 °C/ 350°F (convection 160 °C/325 °F) for 10-12 minutes until golden brown. Remove and allow to cool.

4.

Coarsely chop the chocolate coating and melt it on a double boiler or in the microwave.

5.

Dip the cookies halfway into the chocolate coating, place them on a cooling rack and sprinkle with pistachios. Put the pistachio cookies in a cool place until the chocolate coating has set.
