Matcha not only provides a beautiful color, but also has a pleasantly invigorating effect because the Japanese tea powder offers the power duo of caffeine and L-theanine. In combination, they lead to increased concentration and relaxation at the same time.
The matcha tea powder does add a special flavor, but if you don't get any or don't like the aroma, you can easily make the cookies without it.

Ingredients

- 5 ¼ ozs butter
- 2 ½ ozs Powdered sugar from erythritol
- 2 egg yolks
- ½ tsp Vanilla powder
- 1 pinch salt
- 10 ozs whole spelt flour
- 2 Tbsps Matcha tea powder
- 5 ½ ozs ground almonds
Preparation steps
Work butter with 2 ounces powdered sugar, egg yolks, vanilla powder, and 1 pinch of salt until smooth. Mix sifted spelt flour with matcha and ground almonds and knead into a dough with the other ingredients.
Form into a ball and chill, covered, for 1 hour.
Shape dough in portions with damp hands into approx. 65 small balls (about 3/4" around) and place on a baking tray lined with baking paper and press slightly flatter. Bake the cookies in a preheated oven at 150 °C / 300 °F for 10-12 minutes.
Remove from the baking tray with the baking paper and allow to cool. Then dust with remaining powdered sugar.
