5 ¼ ozs butter
2 ½ ozs Powdered sugar from erythritol
2 egg yolks
½ tsp Vanilla powder
1 pinch salt
10 ozs whole spelt flour
2 Tbsps Matcha tea powder
5 ½ ozs ground almonds

Preparation steps

1.

Work butter with 2 ounces powdered sugar, egg yolks, vanilla powder, and 1 pinch of salt until smooth. Mix sifted spelt flour with matcha and ground almonds and knead into a dough with the other ingredients.

Form into a ball and chill, covered, for 1 hour.

Shape dough in portions with damp hands into approx. 65 small balls (about 3/4" around) and place on a baking tray lined with baking paper and press slightly flatter. Bake the cookies in a preheated oven at 150 °C / 300 °F for 10-12 minutes.

Remove from the baking tray with the baking paper and allow to cool. Then dust with remaining powdered sugar.
