3 ½ ozs Shredded coconut
6 ozs Almond flour
1 tsp -2 TL Matcha tea powder
1 generous pinch Vanilla powder
6 Tbsps honey
2 ½ ozs Apple pulp or alternatively apple sauce (unsweetened)
1 ¾ ozs liquid Coconut oil

Preparation steps

1.

Mix coconut flakes, almond flour and matcha tea powder. Add vanilla powder, honey, apple pulp and coconut oil and mix to a homogeneous, rather sticky dough.

2.

Line a baking tray with baking paper. Divide the mixture into 15 portions and, with slightly moistened hands, first roll into balls, then gently flatten into cookies on the baking sheet.

3.

Bake Matcha Coconut Cookies in a preheated oven at 160 °C /320 °F for 10-15 minutes and then let cool completely.
