- 2 tsps Chia seeds
- 1 ½ ozs hazelnut kernels
- 1 ½ ozs vegan white chocolate
- ½ Vanilla bean
- 3 ½ ozs vegan Margarine
- 5 Tbsps whole cane sugar
- 4 ozs whole spelt flour
- 1 tsp baking soda
- 1 generous pinch salt
- 2 Tbsps Matcha tea powder
Preparation steps
Mix chia seeds with 3 tbsp. hot water and let swell for approx. 5 minutes. Meanwhile, chop hazelnuts and chocolate. Cut vanilla bean in half lengthwise and scrape out the pulp with a knife.
Melt margarine in a saucepan. Stir in sugar, vanilla and chia seeds. Combine flour with baking soda, salt and matcha in a bowl. Add margarine mixture and stir until smooth.
Mix in the nuts and chocolate and chill the dough, covered, for about 30 minutes.
Shape dough into 12 balls. Flatten slightly and place on a baking tray lined with baking paper with a little space between them. Bake Matcha White Chocolate Cookies in a preheated oven at 350 °F for 10-15 minutes. Remove from the tray and allow to cool.
