Whole wheat flour provides a potent mineral combination of calcium and phosphorus, which ensures strong bones and teeth.
If you can't get pecans, the Crispy Cornflakes Cookies can be made with walnuts or hazelnuts instead. The whole wheat flour can be easily replaced with spelt or emmer whole wheat flour.

Ingredients

- 3 ½ ozs pecan kernels
- 2 ¼ ozs Dark chocolate (min. 70% cocoa content)
- 8 ¾ ozs Whole wheat flour
- ½ tsp cinnamon
- ½ tsp Baking powder
- 1 pinch salt
- 4 ½ ozs soft butter
- ½ tsp Vanilla
- 3 ozs whole cane sugar
- 2 eggs
- 6 ozs sugar free Corn flakes
Preparation steps
Grind pecans and finely chop the chocolate. Mix with flour, cinnamon, baking powder, and 1 pinch of salt. Cream butter and vanilla with sugar.
Add eggs and mix in. Quickly knead in flour mixture. Cover dough and chill for approx. 30 minutes.
Remove 35 portions of the dough with a teaspoon and shape into balls. Roll each in cornflakes, place on a baking tray lined with baking paper and lightly flatten Crispy Cornflakes Cookies.
Bake Crispy Cornflakes Cookies in a preheated oven at 180 °C / 350 °F for approx. 15 minutes until golden brown. Remove from the baking tray with the baking paper and allow to cool.
