- 4 eggs
- 250 grams sugar
- 400 grams Pastry flour
- 1 tsp Baking powder
- 400 grams almonds
- 50 grams Candied lemon
- 50 grams candied orange
- 1 tsp cinnamon
- 1 generous pinch cloves
- 1 generous pinch Nutmeg
- 1 generous pinch allspice
- 1 egg yolk
- 80 almonds
Preparation steps

Beat eggs and sugar until fluffy. Stir in flour, baking powder, almonds, candied peel, cinnamon, cloves, nutmeg and allspice and knead into a dough. Wrap dough in plastic and chill for 2 hours.
Preheat oven to 180°C (approximately 350°F).
Roll out dough to about 1 cm (approximately 1/3 inch) thick on a floured surface.

Use a cookie cutter to cut out Christmas trees. Lay dough on a baking sheet. Whisk egg yolk with a little water and brush onto dough. Decorate dough with almonds and candied lime pieces.
Bake for 20 minutes, until light brown. Remove and let cool on a wire rack. Serve once cooled.
