Sour red currants are not for everyone. If you want a less tart flavor, you can substitute for strawberries, blueberries, mangoes, or peaches.

- 3 ozs cane sugar
- 3 Tbsps Orange juice
- 1 oz Cultured butter
- 5 Tbsps 5-Grain cereal flakes
- 10 Tbsps Popped amaranth
- vegetable oil
- 5 ozs red or yellow Currants
- 5 ozs Cream cheese (13% fat)
- 5 ozs Sour cream
- 1 Tbsp Blossom honey
- Sweetener (to taste)

Preparation steps
Place the sugar in a wide pot and heat until melted and golden brown (caramel).
Add orange juice and butter and cook while stirring for 2 minutes until completely smooth. Remove the pot from the heat.
Line work surface with a sheet of parchment paper. Blend 5-grain flakes and popped amaranth into the caramel. Pour the mixture immediately onto the parchment and cover with a second sheet of parchment.
Roll out into a rectangle about 12 x 6 inches. Press edges to make neat. Remove top parchment. Allow amaranth mixture to cool completely.
Using a paper towel, lightly oil the blade of a large knife. Cut the firm amaranth mixture into 8 squares, about 3 x 3 inches, separating the squares from each other.
Transfer parchment paper with squares to a baking sheet and bake on the middle rack of a preheated oven at 400°F for about 8 minutes.
Transfer the parchment paper with the squares onto a wire rack and allow to cool completely.
Meanwhile, rinse the currants, drain and set aside 8 short stems. Strip the berries from the remaining stems with a fork.
Beat together cream cheese, sour cream, and honey in a mixing bowl until smooth with a hand mixer. Stir in currants and add sweetener to taste.
Top amaranth squares with cheese mixture and garnish with the reserved currants.
