- 32 fresh Anchovy fillet (without heads)
- olive oil (For brushing)
- salt
- freshly ground peppers
- 1 handful Basil
- 1 garlic clove
- 30 grams Pine nuts
- 30 grams fresh grated Parmesan
- 60 milliliters olive oil
Preparation steps

Clean the anchovies, if necessary, rinse and pat dry with paper towels. Soak 4 wooden skewers in lukewarm water and place 8 anchovies on each skewer. Brush with olive oil and season with salt and pepper.

Rinse the basil and shake dry. Peel the garlic and chop. Mash basil, garlic, pine nuts, Parmesan and olive oil in a mortar or puree with an immersion blender until mixure is consistency of pesto.

Grill fish skewers on the preheated grill on both sides about 4 minutes, transfer to plates and spread the pesto over the fish. Serve with a tomato salad, if desired.
