500 grams Pastry flour
1 cube Yeast
¼ l lukewarm milk
100 grams sugar
1 egg
1 pinch salt
½ tsp grated Lemon peel
1 tsp Ground cinnamon
60 grams butter

1 ½ kilograms Apple
50 milliliters lemon juice
125 grams slivered almonds
powdered sugar (for dusting)

Preparation steps

Put the flour into a mixing bowl, make a well in the center, and crumble the yeast into it. Add a bit of milk and pull some of the flour from the edge into the center of the well. Cover and let rise for about 15 minutes.

Add the rest of the  milk with half the sugar, the egg, salt, lemon zest, and half the cinnamon. Cut the butter into small pieces and add to the dough. Knead into a smooth dough by hand, with the dough hook of an electrice mixer or in a food processor.

Cover and let rise in a warm place until the dough has doubled in volume, another 30 minutes.

Brush a baking pan with oil and sprinkle with breadcrumbs. Knead the dough briefly then spread in an even layer in the prepared pan. Cover and let rise for a few minutes. 

Preheat the oven to 200°C (approximately 400°F). Peel the apples, cut into quarters, remove the stem and core, cut into thin slices, and sprinkle with lemon juice immediately. Toss the apples together with the remaining sugar and cinnamon. Arrange the apple slices and the almonds evenly over the dough.

Bake for about 40 minutes. Let the cake cool in the pan for a few minutes, then transfer to a wire rack and cool completely.

To serve, dust lightly with powdered sugar and cut into slices.
