For the crumble
½ cup all-purpose flour
¼ cup butter
½ cup maple sugar (or light brown sugar)
½ tsp ground cinnamon
1 pinch salt
For the cake
2 cups self-rising flour (sifted)
¼ tsp salt
1 cup maple sugar (or light brown sugar)
½ cup unsalted butter
2 eggs
¾ cup Sour cream
1 tsp vanilla extract
3 Apple (peeled, cored and diced)
To serve
Whipped cream

Preparation steps

1.
Heat the oven to 180°C (160° fan) | 350°F | gas 4. Grease a 23 cm | 9” square tin.

For the crumble: put the flour into a mixing bowl and rub in the butter until the mixture resembles coarse crumbs. Stir in the sugar. Set aside.
3.
For the cake: beat the butter in a mixing bowl until soft. Gradually add the sugar and beat until smooth.
4.
Add the eggs, one at a time, beating until blended, then beat in the vanilla.
5.
Add a third of the flour and the salt with a third of the soured cream and stir until combined. Repeat twice more.
6.
Spread into the tin and scatter the diced apples over the top. Sprinkle the crumble over the apples.
7.
Bake for 35-45 minutes, until firm to the touch and golden on top. Cool in the tin and cut into squares. Serve with whipped cream.
