- 4 green, eating Apple
- 1 Tbsp lemon juice
- 2 sticks Celery (sliced)
- 1 cup cooked Rice
- ¼ cup cream (30% fat)
- ⅞ cup plain Yogurt
- 3 Tbsps Apple juice
- snipped Chives
Preparation steps
1.
Core the apples and slice thinly, tossing them immediately in the lemon juice in a large bowl. Add the celery and rice.

Whisk the cream until thick, then fold in the yoghurt and apple juice. Pour over the apple mixture, and toss gently to coat.
3.
Divide between serving bowls and serve immediately, garnished with snipped chives.
