Preparation steps

Rinse the plums, halve, pit and simmer for about 5 minutes with sugar and red wine until the fruit is soft. Set some fruits aside, purée the rest and strain through a sieve. Put fruits back in.

Slit vanilla pod in half, combine marrow with the sugar (vanilla sugar, if no marrow) and the eggs, stir until foamy in a bowl with a whisk. Sift flour with salt and baking powder and add with the milk to the egg mixture. Mix everything into a smooth dough, cover and allow to swell in the refrigerator about 30 minutes.

Peel apples, quarter, cut out cores, cut into thin wedges and mix with lemon juice and almonds.

Preheat the oven to 180°C (350°F).

Grease a baking dish and layer batter and apples in the pan, completing the top with batter.
