- 14 ozs Puff pastry dough
- soft butter (for the pie dish)
- 7 ozs brown sugar
- 36 ozs sour Apple
- ½ lemon (juice)
- 3 Tbsps ground almonds
- 2 tsps Ground cinnamon
Preparation steps
Roll out puff pastry approximately 1/8 inch thin. Cut out a circle of 14 inches in diameter and line a buttered pie dish with it. The edges should slightly overhang. From remaining pastry cut out strips approximately 3/4 inch wide.
In a pot, bring 2 ounces water to a boil with 2 1/8 ounces brown sugar. Allow to slightly caramelize until golden brown, stirring occasionally. Remove from heat and allow to cool.
Preheat oven to 350°F.
Peel apples, quarter and remove core and cut into thin slices. Mix with lemon juice, almonds, 3 1/2 ounces brown sugar and cinnamon. Spread into the pie dish and cover with lattice made from pastry strips. Press edges together into a wavy pattern.
Brush with caramel and sprinkle with remaining sugar. Bake in the oven for about 50 minutes until golden brown. If necessary, at the end briefly switch on the grill.
Remove from oven and serve while still hot.
