½ cube fresh Yeast
160 milliliters lukewarm milk
300 grams Pastry flour
100 grams ground Hazelnuts
100 grams sugar
1 pinch salt
1 egg
80 grams butter
For covering
800 grams sour Apple (such as Granny Smith)
½ organic lemon (juice)
For the topping
200 grams Pastry flour
120 grams sugar
100 grams ground almonds
½ Vanilla bean (seeds)
150 grams butter

Preparation steps

1.

For the dough: Dissolve yeast in lukewarm milk. Mix flour with nuts, sugar and salt, place in a bowl, pour in yeast milk, add the egg and distribute butter in small pieces around the bowl. Either by hand or with the dough hook of an electric hand mixer combine all ingredients and knead to a smooth dough. Knead well and allow to stand for about 1 hour in a warm place.

Preheat oven to 180°C (approximately 350°F).

For covering: Peel apples, cut into quarters, remove cores and cut into small slices and mix with lemon juice.

For the topping: Combine flour with sugar, almonds and vanilla seeds. Melt the butter, add to flour mixture and work everything to a crumble.

Knead dough again and roll out well on a floured work surface in the size of the baking sheet. Line baking sheet with parchment paper and place in dough. Spread apples on top and finish with topping. Bake in preheated oven for about 45 minutes. Remove, let cool and serve cut into pieces.
