Preparation steps
Rinse apples, wipe dry, quarter and core. Plane with a vegetable slicer into thin slices.
Line a baking sheet with parchment paper and spread the apple slices over the parchment. Place in the preheated oven on the middle rack, hold the oven door open slightly with a wooden spoon and let the apple slices dry at 140°F for about 2 hours.
Chop the chocolate very fine. Take apple chips from the oven, sprinkle with the chocolate, and slide back into the oven. Heat at 175°F to melt the chocolate.
Switch off the oven and let the apple chips cool slowly in the oven. Serve or store in a container and use within the next 4 days.
