Preparation steps

1.

Mound the flour and almonds on the work surface, mix with salt and sugar. Make a well in the center of the flour. Cut the cold butter into small pieces. Add the butter and egg to the well, and use a pastry cutter or 2 table knives to work the dough until it resembles a coarse meal. Press the dough into a ball with your hands. Wrap in plastic and refrigerate about 30 minutes.

2.

Peel the apples, cut into quarters, and remove the stems and cores. Cut the apple quarters into wedges. Toss with lemon juice and sprinkle with cinnamon.

3.

Rinse the strawberries, pat dry, remove the stems, and cut into quarters.

4.

Mix strawberry quarters with the apple wedges and toss together with sugar. Put the fruits in an ovenproof ceramic baking dish or pie plate.

5.

Roll out the dough on a floured surface and cut into a round large enough to fit the pan. Press gently onto the rim of the baking dish and crimp the edge to seal.

6.

Cut decorative heart shapes from remaining pastry and attach to the crust with some beaten egg white.

7.

Bake in an oven preheated to 180°C (approximately 350°F) for about 35 minutes or until golden brown.
