200 milliliters Passion fruit juice
250 grams Whipped cream
50 grams chopped Pistachio
50 grams dried Apricot
50 grams dried Passion fruit

Preparation steps

1.

Soak gelatine in cold water. Whisk egg yolks with sugar over hot bath until thick and creamy. Gradually add passion fruit juice. Add squeezed gelatin and stir until dissolved. Beat egg whites until stiff and fold. 

2.

Place mixture in cold rinsed molds and refrigerate for 2 hours. Sprinkle with pistachios and refrigerate for more 2 hours. Invert onto plates and garnish with chopped passion fruit and apricot pieces. Serve.
