Preparation steps

Rinse, trim and blanch the spinach in boiling salted water. Rinse with cold water and squeeze dry. Peel the garlic and the onions, finely chop the garlic, halve the onions and cut into strips. Sauté the onions in hot sesame oil 1-2 minutes. Add the garlic, sesame seeds and spinach and cook 2-3 minutes. Season with salt and lemon juice.

Cut the meat into bite-sized pieces. Halve, pit and slice the apricots. Alternately thread the meat and apricots onto wooden skewers. Rinse, trim and chop the chile pepper. Mix with the oil and brush on the skewers. Season with salt and cook in a hot pan about 2 minutes on each side. Drizzle with honey and let caramelize slightly. Serve on the spinach and garnish with fresh herbs if desired.
