Preparation steps

Score the apricots cross wise. Blanch the apricots in boiling water. Remove the apricots from the water, and rinse under cold water. Peel the apricots and cut in half. Remove the seeds, finely dice, and weigh the fruit.

Mix the apricots and an equal amount of jam sugar in a pot. Add the lemon juice, and stir to combine. Bring to a boil, and cook for one minute. Fill the prepared jars to the brim with the jam and seal tightly.
