Preparation steps

Peel and finely chop the onion and garlic. Rinse the chili, remove the seeds, and finely chop. Rinse and halve the apricots. Remove the stones and cut into large cubes. Heat the oil in a pan, and sauté the onion and garlic. Add the chili and apricot, and sauté briefly. Deglaze with the wine and season to taste with salt, pepper, and sugar. Simmer for 15 minutes over medium heat. Puree the mixture, bring to a boil, and adjust the seasoning. Transfer the ketchup to clean jars and seal tightly.
