Ingredients

For the fish balls and egg noodles
450 grams firm, white fish fillets
4 sprigs fresh cilantro
2 scallions
3 Tbsps Starch (or rice flour)
1 Tbsp Fish sauce
1 egg
1 Tbsp Red Curry paste
2 tsps Red chili peppers (chopped)
125 milliliters vegetable oil
200 grams Egg noodle
To garnish
small red chili peppers

Preparation steps

1.

Rinse the cilantro, shake dry and pluck the leaves. Rinse the scallions, trim and thinly slice.

2.

Rinse the fish, pat dry and chop finely.

3.

Mix the cornstarch, fish sauce, egg, cilantro, curry paste, chiles and scallions with the fish. With wet hands, form each 2 tablespoons of the mixture into small patties.

4.

Heat the oil in a wok. Sear the patties until golden brown on both sides. Cook the egg noodles according to the package directions, drain, rinse under cold water and drain again.

5.

Distribute the noodles between serving bowls, top with the fish balls and garnish with chiles.
