Preparation steps

Cook the noodles cook in salt water according to package directions. Run under cold water to stop cooking and drain.

Rinse the prawns, pat dry and place in a bowl. Peel the garlic, chop or press, and combine with the lime juice and the soy sauce with the shrimp. Rinse the pepper, remove seeds and ribs and cut into fine strips. Rinse the chili, remove seeds and finely chop. Peel the ginger, cut first into thin slices, then cut into fine strips. Rinse the cilantro, shake dry and finely chop the leaves.

Heat the oil in the wok. Drain the shrimp, taking care to collect the lime juice. Cook the shrimp in hot oil for about 1 minute. Then add the pepper, ginger and chili and cook 2-3 minutes. Stir in the noodles, allow to become warm and stir in the cilantro with 2-3 tablespoons lime marinade. Season and serve with salt, pepper and lime juice.
